These grain free, refined sugar-free cookies are so easy to make and taste delicious. Great to make with kids too, and thanks to the protein and fibre they contain, not to mention only containing a small amount of natural, unrefined sugars, they are gentle on blood sugar levels.
Ingredients - makes 12
200g ground almonds
55g unsalted butter, softened
1/2 tsp bicarbonate of soda
1 tbsp raw honey
1 tbsp blackstrap molasses
50g dark chocolate (85% cocoa) cut into small pieces.
Preheat oven to 170 degrees c. Line a baking sheet with parchment paper.
Using a food processor, pulse together the almonds and bicarbonate of soda to mix through before adding the butter, honey and molasses. Pulse again to bring everything together in a dough. Remove the blade and stir through chocolate pieces and then form into 12 balls and place on the prepared baking sheet, shaping and pressing down to make cookies.
Bake in the oven for 10-12 minutes until golden, and then remove and allow to cool for a few minutes before transferring onto a wire rack to cool completely.
